What goes on it
We use San Marzano tomatoes crushed by hand on the day, fior di latte torn over the top and basil added the moment the pizza leaves the oven, so the leaves wilt but never burn. Ninety seconds at 450 °C gives the leopard-spotted rim Neapolitans call the cornicione.
